Spicy and healthy - the marinade


Take the best olive oil, chopped herbs (thyme, oregano, basil), a little mustard, salt and pepper and plenty of crushed garlic clove and prepare a spicy marinade.

In the Mediterranean countries, preserving vegetables for antipasti and meat before grilling in spicy marinades has a long tradition.

Not only because a marinade makes the taste perfect but also, as scientists have researched in recent years, because the herbs in the marinade and their garlic, onions and mustard contain several substances that can have a health-promoting effect.

When meat is grilled, it forms - so called heterocyclic amines (HCA), which has a carcinogenic effect in animal experiments. Inserting in marinade reduces the formation of this HCA by up to 99%. The garlic in the marinade combines pleasure with health. Toe ingredients such as fructans, saponins, flavonoids and sulphur compounds are effective against bacteria and fungal diseases.

Regular consumption improves the flow properties of the blood, lowers blood pressure and shows anticarcinogenic effects in animal experiments. Until the end of the Middle Ages, they also regarded garlic as a lucky charm: they used it as an opiate and as an aphrodisiac. As it says in medieval herbal books: “Garlic makes beautiful sleep and makes you want to work in marriage”.

Many herbs also grow in pots on the balcony or on the kitchen window.

Marinate sheep’s cheese in olive oil, garlic, oregano 
and some chili!

No herb has grown against the smell of garlic. The only thing that helps: 
eat garlic together.
